WM The Restaurant Maui
Maui's most elegant restaurant opened in 2005 and CLOSED
in July of 2006 in
Honokowai, a couple miles north of Kaanapali Beach. WM stands for West
Maui and it was at the former site of A Pacific Cafe in the Honokowai
Markeplace shopping center, on the corner of Honoapiilani Highway and the
Lower Honoapiilani Road. Phone (808) 667-7898
Plush dark booths create a romantic ambiance and
top-notch service creates a fine dining experience. Caesar salad and
Pineapple Flambe dessert are created tableside. WM menu includes special
preparations of meats and seafoods, with both the decor and the food being
metropolitan style, as you might find in any big American city. (See below for some specific WM menu
items as well as photos.)
Expensive and luxurious, but not tropical. Bad
concept for this area, so only lasted one year.

frequently, so the following items may not all be available on any one day.
But here are examples of some of the menu choices as of early 2006.
(I'm sorry, but I can't include prices because they change.)
Appetizers:
Oysters Rockefeller, lightly poached in sauteed Pernod
infused spinach and baked with Hollandaise
Dungeness Crab Cake pan seared and served with tear drop cherry tomatoes and
citrus asparagus sauce
Lump Crab and Raspberry with field greens and creme fraiche in a martini
glass
Salads:
Baby Greens & Maytag Blue Cheese with candied spiced walnuts
Baby Spinach with goat cheese and apple smoked bacon garnished with hard
boiled eggs
Heirloom Tomatoes with chopped mozzarella, cucumber, watermelon and toasted
pine nuts
Classic Caesar Salad prepared tableside
Entrees:
Filet Mignon with foie gras with fingerling potato
confit
New York strip steak with au gratin potatoes
Prime rib of pork with herbed polenta
Rack of lamb with rosemary au gratin potatoes and asparagus
Stuffed Ahi (tuna) filled with crabmeat, with white truffle risotto
Opakapaka (pink snapper) Florentine with garlic mashed potatoes
Pan seared Ono (wahoo fish) with roasted fingerling potatoes
Whole Maine lobster with mashed potatoes with carmelized leeks
Dessert:
