Sonz at the Hyatt Regency Maui Sonz is the fine-dining restaurant for dinner only at the Hyatt Regency Maui hotel on Kaanapali Beach. Phone 808-667-4506. Sonz is located in Swan Court, the beautiful restaurant on the lower level, where the Hyatt also serves buffet breakfast every morning. Sonz is owned and run by the company that runs Sarento's on the Beach in Kihei and Nick's Fishmarket in Wailea. The Swan Court location at the Hyatt provides Sonz with very high ceilings and tall doors that open onto a pond and waterfall, with black and white swans swimming nearby. The ocean is visible beyond the pond. Sonz is a luxury restaurant with very good food and service at high prices. See below for a list of some specific Sonz menu choices.
