Cascades is a beautiful outdoor and indoor restaurant at the Hyatt Regency Maui on Kaanapali Beach.  Cascades serves innovative island cuisine and sushi for dinner only.  Phone 661-1234.

Cascades is located on the ocean side of the Hyatt's lobby level.  At sunset, the views are wonderful.  Each evening there are three or four kinds of fresh Hawaiian fish in your choice of four preparation styles.  There are also meats and a complete sushi menu, as well as a separate sushi bar.  See below for some specific Cascades menu items as well as photos.

For beautifully presented food in a beautiful setting, Cascades is a great choice.

 
Cascades at the Hyatt Maui sometimes makes menu changes, so the following items may not all be available on the day you go.  But here are examples of some of the menu choices as of 2006.  (I'm sorry, but I can't include prices because they change.)

Appetizers:
Lobster Mango Summer Rolls
Shrimp Nokekula
Ahi Poke
BBQ Babyback Ribs

Soups and salads:
Hawaiian Seafood Chowder
Miso Soup
Baby Spinach Salad with carmelized walnuts, dried papaya, Dungeness crab
Upcountry Greens, Kula tomato, Maui onion, fresh pineapple

Fish Entrees:
Mahi Mahi or Opakapaka or Ahi or Opah
prepared in any of these four styles:
Hibachi with soy glaze
Grilled with sea salt and Maui onion butter
Chinese Steamed in a bamboo basket
Furikake Saute with crystallized ginger vinaigrette

Non-fish Entrees:
Braised Roulade of Beef Short Rib
Huli Huli Chicken asian spiced
Lavender Scented Lamb Chops
New York Steak
Filet Mignon
Grilled Rib Eye

Dessert:
Coconut Creme Brulle
Funky Chocolate Cake with Banana
